Leek Lemon w/Carrots & Celery

A yummy Avgolemono soup that is vegetarian! Leeks, potatoes, carrots and celery simmered in a vegetable stock and finished with the traditional sauce: fresh eggs cracked and beaten into freshly squeezed lemon juice, tempered with the hot stock and then all poured together to thicken naturally without added starches. Did we mention the dill added at the end that allows it to retain all its flavor and color?
